We doin soup

White Bean, Potato, Leek, and a smidge of bacon Soup.

Includes carrots and onions, chicken stock I made, tomato paste & spices.

I used two cans of beans(rinsed) today, instead of soaking. I took one can of beans, and emersion blended them with a cup of the broth, and dump it in the pot. it makes in creamy, and I love it.

My dad died and Im having trouble as I meet my (fully trauma riddled) extended family over the last few weeks. Crying a lot for everyone's pain. Needed some comfort today. Soup is love.

This is how I made this one!

  • half large white onion, diced
  • three whole carrots, cut to size
  • three medium size leeks, chopped and washed (everything gets washed, but leeks really gotta be wash washed)
  • two large potatoes, diced to size
  • 6 (okay i used a bit more than normal today) strips of cooked bacon (usually I only use 2-3 strips, I had a fuck it moment), chopped
  • 2 cans white bean of choice (I used Northern), rinsed with cold water in the collander.

Set one can (half) of the beans into an emersion blender cup, to blend smooth later with broth. (A blender would also work in place of an emmersion blender, but I would not pull this out for 30 seconds of use, + cleanup. You could just mash them with a fork).

About 6 cups chicken stock, and.. four-ish cups of water to fill.

spices: salt, pepper, paprika, dried garlic, oregano, crushed red pepper, cayanne pepper and 1-2 tbs of tomato paste.

  • prep all ingredients.

  • in the stockpot, add a few tablespoons of olive oil (or oil of choice) and heat on medium.

  • add onion and stir/cook 3-4 mins.

  • add carrot and stir/cook 3-4 mins.

  • add potato and stir/cook 3-4min.

  • add spices; tomato paste and stir/cook 2-3 mins.

  • add chicken stock, deglaze ur stock pot (just stir anything stuck the bottom in), and fill pot with water so its a little more than 3/4 full.

  • ladle in about a cup worth of broth into the blender cup with the beans, blast them with the emersion blender til smooth.

  • add all beans in, the blended and whole.

  • add chopped bacon

  • Let soup simmer on medium/low (I have to use my lowest setting). When I see the soup has started to boil off some of the water, usually about 20 mins, add the leeks. Simmer another 20-30 mins.

  • Enjoy!

This looks great. The last ham/bean soup I made I blended it all, but only doing some is a great idea. Mine ended up too thick.
