Belgian waffles

Liège Waffles

Ingredients • 250 g flour • 100 g pearl sugar • 1 tsp (1 packet) dry yeast • 150 ml soy milk • 100 g vegan butter (plus 30 g for greasing the waffle iron) • 1 tsp vanilla sugar or vanilla extract (≈ 5 g) • 25 g sugar • 1 g salt

Instructions

  1. Prepare the butter Take the vegan butter out of the fridge and let it come to room temperature. You will need 100 g for the dough and 30 g to grease the waffle iron.
  2. Mix the dry ingredients In a bowl, combine: flour, sugar (25 g), vanilla sugar, salt, and dry yeast. Mix well.
  3. Make the dough Add the soy milk and 100 g vegan butter. Mix for about 10 minutes (using a dough hook if possible) until the dough is smooth and well combined.
  4. Let the dough rise Cover the bowl with a damp towel. Let the dough rest for at least 1 hour at room temperature, or overnight in the fridge.
  5. Add the pearl sugar Gently mix in the pearl sugar until evenly distributed.
  6. Bake the waffles Preheat the waffle iron and grease it with the remaining butter. Place small portions of dough into the iron. Bake until golden brown (about 2 minutes on medium heat, depending on your waffle maker).

• Don’t overmix after adding the pearl sugar. • The dough should be slightly sticky.
