Liège Waffles
Ingredients • 250 g flour • 100 g pearl sugar • 1 tsp (1 packet) dry yeast • 150 ml soy milk • 100 g vegan butter (plus 30 g for greasing the waffle iron) • 1 tsp vanilla sugar or vanilla extract (≈ 5 g) • 25 g sugar • 1 g salt

Instructions
- Prepare the butter Take the vegan butter out of the fridge and let it come to room temperature. You will need 100 g for the dough and 30 g to grease the waffle iron.
- Mix the dry ingredients In a bowl, combine: flour, sugar (25 g), vanilla sugar, salt, and dry yeast. Mix well.
- Make the dough Add the soy milk and 100 g vegan butter. Mix for about 10 minutes (using a dough hook if possible) until the dough is smooth and well combined.
- Let the dough rise Cover the bowl with a damp towel. Let the dough rest for at least 1 hour at room temperature, or overnight in the fridge.
- Add the pearl sugar Gently mix in the pearl sugar until evenly distributed.
- Bake the waffles Preheat the waffle iron and grease it with the remaining butter. Place small portions of dough into the iron. Bake until golden brown (about 2 minutes on medium heat, depending on your waffle maker).
• Don’t overmix after adding the pearl sugar. • The dough should be slightly sticky.
