Why do some posts get removed and scrubbed from the modlog?

Because it wasn't a mod action. Its owner deleted it

Oh, I had no idea that it didn't just hide the post like on reddit but actually scrubbed the link. That's an interesting behaviour, pros and cons but definitely much safer than the alternative

Ye. Mods can still see it (which is why I know it's deleted by the creator) which helps against spam and other bad stuff.

Cool, thanks for answering. I can see my own deleted posts which mislead me as to what was occuring.

Was the author maybe posting from another instance, or are there moderators in that community from other instances? I once had to go digging in the modlog of the instance a comment was deleted from; my own instance had zero record of it, beyond the "removed by moderator" tag on the comment in my profile.
