Try Enslaved Odyssey to the West, it's "old" at this point but it's kinda the same.
I found the Ghost games similar. Then moved to cyberpunk 2077 but that’s more like fallout. Red dead 2 might also work.
I second the recommendation for the Ghost of Tsushima and Yoitei games.
If you have PSVR and don't mind a poor $/playtime value, the Horizon VR game is extremely short but very pretty. It's mostly a climbing simulator and has no replayability, but there are a couple of moments early on where the VR absolutely shined. I even had an "oh shit, this is mindblowing" moment at one specific point.

Cyberpunk 2077 has the all the free roaming outfit hoarding mayhem your heart desires.
Gothic 1 Remake is hot off the presses if you're looking for more fantasy dino fights.
If you enjoyed the reflex action combat, Expedition 33 has that in spades (but is turn-based)
There's no shortage of good options out there.
